Roast Chicken & Asian Inspired Stir Fry

You know what I love the most about eating LCHF – I can finally eat all my favourite cuts of meat without feeling guilty. Gone are the days of eating miserable dry poached chicken breast – bring on those juicy thighs and crispy skin 🙂

This is what C made me for dinner tonight: Crispy chicken thigh with Asian inspired stir fry – what a fantastic meal. C fried the veggies in olive oil and coconut oil and together with the crispy skin, there was enough fat in the meal to feel satisfied. I was full after one thigh, so I am brining the other with me to work tomorrow for lunch!
