Its been slightly over a week since I started my LCHF challenge, and I have been pleasantly surprised at how easy it has been. However, after a week of eating a LOT of meat, and meat based meals – I could not face another meat heavy dish today for dinner. So I made a leek and goats cheese frittata, served with a fresh salad and cheddar cheese. It was just what we needed and it has got my mind ticking on other vegetarian main dishes that we can have in the upcoming weeks.
A slice of this frittata will also serve as a good snack during the day.
